Hundreds of years ago, as legend has it, a clumsy farmer’s wife spilt buckwheat porridge onto a sizzling, flat stone in their fireplace in Brittany, France… et voilà, the birth of the galette de sarrasin! The buckwheat crêpe remains a Breton staple, now popular all over France. This crispy and savoury French pancake is traditionally followed by a classic sweet crêpe, all accompanied by a bowl of bubbly apple cider. Ça Marche’s interpretation of the galette de sarrasin unites a Breton tradition with a Pacific Northwest twist, using fresh, local products to complement naturally gluten-free buckwheat crêpes.
